Ingredients:       (portions for a 5 gal. batch)
 4 lbs.  Wheat extract  
 2 lbs.  Honey  
 1 lbs.  Sugar (Candi - Amber)  
 1 lbs.  Dark Malt syrup  
 0.1 lbs.  Barley (Black Roasted)   All grain
 1 lbs.  DME (Amber)  
 0.25 lbs.  Barley (flaked)   All grain
 0.5 oz.  Cascade   (pellet% AA) Boil time 15 min.
 1.5 oz.  Cascade   (pellet% AA) Boil time 60 min.
 1 oz  Corriander  
 1 oz  Orange Peel  
 1 oz.  Wyeast 3944 (Belgian Wit)  Yeast   (Ideal ferm. temp: 62-75°F)
Directions:
Use orange blossom honey, if possible.
Add barley (black and flaked) to 1/2 gallon of water and raise the temperature to anywhere between 150-158°F. Remove from heat, cover and let stand for 40 minutes.
Dump the stuff into a kitchen colander or large strainer and catch the runnings in a pot. Pour another 1/2 gallon of hot water over the grain and catch this runoff as well.
Add to 2 gallons of water to boil, and boil. When boiling add the extract, honey, sugar (candi) and boiling hops.
Add 1/2 oz. of corriander and 1/2 oz. of orange peel at last 15 minutes of boil. Add another 1/2 oz. of corriander during cooling for aroma. Add 1/2 oz. orange peel at cooling.
Ferment at room temp. Rack after one week. Three to six weeks in secondary (longer due to the higher OG).
